Tomatillo Guacamole
It is always a good idea to have an awesome guacamole recipe on hand. I used to think I had the greatest guacamole recipe, until this happened. This Tomatillo Guacamole is so simple, and so good. You won’t believe how using tomatillo instead of regular tomato will change everything. For those of you that don’t know, tomatillos are nothing like green tomatoes. They are Mexican native tomatoes that come wrapped in a green husk. You can remove the husks before you cook with them. You will notice that the skin is a bit sticky. You can easily fix this by rinsing it under water. Tomatillo actually translates to “little tomato” in Spanish. Unlike regular tomatoes, you’ll notice that tomatillos do not have a watery consistency like regular tomatoes do. They also bring a bright, subtly sweet, and citrus like flavor to the guacamole that you won’t be able to resist. Better have a big bag of tortilla chips ready! You’re going to need it!
INGREDIENTS
- 2 -3 ripe avocados
- ¼ red onion – finely diced
- 1 large garlic clove – pressed
- 1 tomatillo – diced
- 1 handful of cilantro – chopped
- Salt & pepper to taste
STEPS
1. Cut the avocados in half, remove the pit, and then remove the avocado from the skin with a spoon into a bowl. Mash the avocado with a spoon.
2. Finely dice the red onion, to keep the flavor from overpowering the guacamole, and add it to the bowl. Also add the pressed garlic.
3. Dice the tomatillo into small pieces, and chop a handful of cilantro and add it to the bowl with the rest of the ingredients.
4. Mix all the ingredients in the bowl with the avocado with a spoon until everything is well combined. Add salt & pepper to taste.
5. Serve with chips, a cold margarita, and enjoy!
