Orzo Pasta With Sausage Meatballs
This recipe is super simple to pull together, and will have your kitchen smelling like an Italian restaurant. The recipe is adapted from a Food Network recipe that you can find here.
INGREDIENTS
3 Italian sausage links
1 (15 oz.) can of diced tomatoes
½ cup of chicken broth
½ cup white wine (can replace with chicken broth)
1 cup orzo pasta
1 bunch of fresh Italian flat leaf parsley
1 teaspoon of Italian seasoning
salt and pepper to taste
1 lemon
vegan Parmesan cheese
STEPS
1. Remove the casings from each sausage link. With a knife, cut the link into 10 equal parts and roll it with your hands to make a mini meatball.
2. Heat olive oil in a large skillet over medium-high heat, and brown the sausage meatballs until browned on both sides, about 6-10 minutes.
3. Add diced tomatoes, chicken broth, wine, orzo pasta, and Italian seasoning and stir until combined. Cover the pan and simmer for 7 minutes, stirring half way through. Make sure to scrape the bottom of the pan.
4. Stir in the chopped parsley, lemon juice, and salt and pepper and finish cooking without the lid on until pasta is finished.
5. When serving, top with vegan Parmesan cheese and enjoy!
