Cauliflower Crust BBQ Chicken Pizza

If there was one thing that was hard to give up when I went dairy free, it was pizza. However, after a while I realized I didn’t have to give it up completely, I just had to get creative. This is my go to recipe when I’m craving pizza. I don’t use dairy free cheese too often when I cook, but I always make sure to have some on hand when I’m planning on making this recipe. I even like taking it one step further, and use Trader Joe’s Gluten Free Cauliflower Crust to make it both dairy & gluten free. The barbecue sauce, along with the rest of the toppings makes this pizza recipe sweet, spicy, and delicious.

Make it Gluten Free: This recipe is already gluten free! Just be sure to use cauliflower pizza crust & gluten free BBQ sauce.

INGREDIENTS

  • 1 Trader Joe’s Gluten Free Cauliflower Pizza Crust
  • 1 bottle of BBQ Sauce
  • 1 Package of Daiya Mozzarella Style Shreds
  • 1 Chicken Breast - Grilled
  • ¼ Red Onion – Thinly Sliced
  • ½ Jalapeno – Thinly Sliced
  • 1 Small Bunch of Cilantro

STEPS

1.      Follow the baking instructions on the box to bake the Cauliflower Pizza Crust in the oven.

2.      In the meantime, grill the chicken breast after seasoning it with salt and pepper. Once done, shred the chicken with a fork & knife into small pieces.

3.      Once the crust is ready, spread enough BBQ sauce onto the crust to create a thin layer that almost reaches to the edges.

4.      Next, take a few handfuls of the Daiya dairy free cheese, and sprinkle on top of the BBQ sauce base. I found that less is more in this case.

5.      Take your shredded chicken and place on top of the dairy free cheese. Then place your slices of red onion, jalapeno, and cilantro leaves on top of the pizza.

6.      Place pizza pan into the oven, leaving the door slightly open, and broil on high for about 5 minutes.

7.      Remove the pizza from oven, cut it into slices, and serve.
